Made from Pinot Noir grapes originally destined for our still White Pinot Noir, the 2024 Pet-Nat is a naturally sparkling wine crafted with minimal intervention. Whole clusters are gently pressed using a slow “champagne” program to preserve purity and limit color extraction. The juice ferments spontaneously with ambient yeast and is hand-bottled mid-fermentation, finishing in bottle under a simple crown cap. No additives, no sulfur, just pure grape juice transformed into a vibrant, fizzy expression of Maggy Hawk
