Giant Steps’ winemaking style blends nature and science with their gravity-flow cellar. This method gently guides wine through each stage of production by relying on gravity to move wine from a higher elevation to a lower elevation. For instance, the fermentation tanks are 9 feet above the ground. Instead of using pumps or other mechanical devices to push the delicate Pinot Noir juices and skins into the tank, they carefully lift the bin of juice and skins up and over the fermentation tanks with a crane to let gravity do its thing. This careful (almost tender) approach avoids harsh processing and will maintain subtle flavors.
